With all the talk about "Green", which cutting board
material is greenest? Natural materials like granite,
bamboo and solid hardwood are the greenest materials.
While each material offers unique properties, it's
essential to strike a balance between functionality and
sustainability. Granite is plentiful in North America and
has a small carbon footprint but is notoriously hard on
cutlery blades. Bamboo is sustainable, but boasts a
relatively large carbon footprint considering the cost of
transport and questionable harvest and labor practices.
Solid hard maple is renewable, sustainable and plentiful
in the northern United States and Canada. Many large
cutting board manufacturers own tracts of timber that are
managed by company foresters. These teams use select
harvesting and replanting practices to ensure healthy
sustainable forests for the future of their operations. The
carbon cost of transport is low, and many reuse the wood
waste from manufacturing to power their plants.
